Classic Banana Pudding

This classic Southern banana pudding features layers of vanilla wafers, sliced bananas, and homemade vanilla pudding, all topped with a fluffy meringue. It's a timeless dessert that's perfect for gatherings and family dinners.

Ingredients

For the Pudding:

  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons vanilla extract
  • 1 box (11 oz) vanilla wafers
  • 4-5 ripe but firm bananas, sliced

For the Meringue:

  • 4 large egg whites (reserved from yolks)
  • 1/4 teaspoon cream of tartar
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions

Step 1: Make the Pudding

In a medium saucepan, whisk together 3/4 cup sugar, flour, and salt. Gradually whisk in the milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil, about 8-10 minutes.

Step 2: Temper the Egg Yolks

In a small bowl, lightly beat the egg yolks. Gradually whisk in about 1 cup of the hot milk mixture to temper the yolks. Pour the yolk mixture back into the saucepan, whisking constantly.

Step 3: Finish the Pudding

Continue cooking over medium heat, stirring constantly, for 2 more minutes. Remove from heat and stir in butter and vanilla extract. Let cool slightly.

Step 4: Layer the Pudding

Preheat oven to 350°F (175°C). In a 2-quart baking dish, arrange a layer of vanilla wafers on the bottom. Top with a layer of sliced bananas, then spread 1/3 of the pudding over the bananas. Repeat layers twice more, ending with pudding.

Step 5: Make the Meringue

In a clean bowl, beat egg whites and cream of tartar with an electric mixer on medium speed until soft peaks form. Gradually add 1/3 cup sugar, beating on high speed until stiff, glossy peaks form. Beat in vanilla extract.

Step 6: Top and Bake

Spread meringue over the pudding, making sure to seal the edges to the dish to prevent shrinking. Use the back of a spoon to create decorative peaks. Bake for 12-15 minutes, until meringue is golden brown.

Step 7: Cool and Serve

Remove from oven and let cool to room temperature. Refrigerate for at least 3 hours before serving. Best served within 24 hours.

Tips and Notes

  • Banana Selection: Use bananas that are ripe but still firm. Overripe bananas will become mushy and brown quickly.
  • Prevent Browning: Toss banana slices with a little lemon juice to prevent browning if not serving immediately.
  • Make Ahead: You can prepare the pudding layers ahead, but add the meringue and bake just before serving for best results.
  • Alternative Topping: For a quicker version, skip the meringue and top with whipped cream and crushed vanilla wafers instead.
  • Storage: Store covered in the refrigerator for up to 2 days. The wafers will soften over time, which many people prefer.
